Keeper’s Tips

• Aquarium Prep (The End-to-End Boil): Because these stalks measure between 16 and 24 inches, standard stockpots may not fit the entire length at once. Submerge one half into boiling water for 10 to 15 minutes, then use tongs to flip the stalk and boil the other end. After boiling, soak in fresh water until it sinks reliably and releases its initial flush of dark tannins.
